Cabbage Soup for Weight Loss:-
Ingredients:
- 2 tablespoons extra-virgin olive oil
- 2 cups chopped onions
- 1 cup chopped carrot
- 1 cup green bell pepper
- 4 large cloves of garlic, minced
- 8 cups sliced cabbage
- 1 tablespoon tomato paste
- Chipotle peppers in adobo sauce, one tablespoon minced
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- Four cups of chicken or vegetable broth with a reduced sodium content
- 4 cups water
- Black or pinto beans, low-sodium canned in two (15-ounce) cans
- ¾ teaspoon salt
- a half cup of chopped fresh cilantro, plus extra for serving
- 2 tablespoons lime juice
- yogurt or diced avocado for garnish
Steps for preparation:
Step 1: First, bring the oil to medium heat in a big pot (8 quarts or larger). Add onions, carrots, bell peppers, and garlic. Cook, stirring frequently, until it is softened for 10 to 12 minutes. Add the cabbage and continue cooking for another 10 minutes, stirring regularly. Add tomato paste, chipotle, cumin, and coriander. Continue to stir for another minute while the food cooks.
Step 2: Add broth, water, beans, and salt. Cover and boil over high heat. Simmer, partly covered, over low heat, for approximately 10 minutes, or until the veggies are soft. Take off the stove and mix in the lime juice and cilantro. Garnish servings with avocado, cheese, or yoghurt.
